A Lazy Sunday–Wishful Thinking

I was trying to achieve the goal of planning and getting things done this weekend.  It started good and we cleaned out the garage.  I made a ton of Siopao, cleaned some more and than Sunday came.  Sunday is always a strange day for us because we know we should get up and get stuff done but it does not always happen.  Laziness sets in and all we do is stare at the TV. 
I forced myself to get motivated to “plan meals”, go grocery shopping even with some coupons, and  prep some dishes for the week.  I really just made lasagna and some Turon (aka banana eggrolls).  I was quite proud of myself.  We will see how long that will lasts or myself and The Daughter will be eating a lot of pasta and fried rice.

Recipes to follow hopefully this week
Normally for a Sunday, I try to make something fancy but when a 2 year old is screaming for food and starts attacking the pantry I tend to give up.  I always end up making Champorado (chocolate rice) or just giving her cereal.  This week I decided to make crepes,  I actually was craving it.  I first learned to make them in my Jr High home economics class.  My dad started to make them himself and since than, he would be the one making them.  I picked up the recipe when I started to make fresh lumpia.  I found that I liked the texture of the wrapping better than the frozen stuff wrappers. 
Crepes
(Adapted from All Recipes)
1 Cup of Flour
1/2 Cup of Sugar
1/2 Cup of Water
1/2 Cup of Milk
1 Tsp of Salt
2 Eggs
2 Tbs of Melted Butter
Directions
  1. Mix together the milk, eggs, water and sugar.
  2. Slowly add the flour than butter.
  3. Heat a small to medium skillet until it is hot and add a little butter.
  4. Pick up the skillet and pour a small ladle of the batter.  Swirl around the batter until it creates a thing pancake. 
  5. Place it back on the stove and cook for about 5 minutes or until it starts to pull away from the pan.
  6. Flip to lightly cook the other side and serve.

I hope this planning gets easier because it was exhausting.  Whew I get tired just thinking about it.

  1. The daughter is so cute. She's so lucky that she gets lots of good eats. I am in the same rut you are in. I do plan to do things but most of the time the spirit is willing but the flesh is weak. It's not bad to just chill out and do nothing once in a while.

  10. As much as I love crepes, I have never tried to make my own. You've inspired me to give it a try (because now I'm craving it). The Turon you mentioned sounds delish too(I love banana things).
