Kulinarya Cooking Club–Tinola

I haven’t been able to post for a while.  Between 2 months of on and off of illnesses (flu, bronchitis, and the sniffles) and a few complications in with my pregnancy I  haven’t had the energy to cook or even eat.  You know what is the worse thing for a food blogger, not wanting to eat or cook.  I can’t wait until I get my appetite back.  It has been a fun winter.  On top of all of this, I also started the last set of classes for my masters program.  If it wasn’t for work, I wouldn’t have time or energy to look at a computer.  Unfortunately this means I need to slow down with my blogging. 



For this month, the theme was a dish we wanted for our birthday.  I was originally going to make Kare Kare but our local grocery store was out of ox tail.  I was also going to make a mocha cake but all of my energy went out the window even before I started to cook.  Instead I decided to make tinola for my birthday dish.  It has been so long since I made tinola.  I don’t get to make it that much because The Daughter was allergic to chicken. 
Tinola
1 Whole Chicken
1 Whole Onion Diced
4 Chayote Peeled and Cubed
2 Tbs of Sliced Garlic
Salt and Pepper to taste
3-4 Cups of White Rice
Direction
  1. Take a large stock pot and start heating up the pot with a little oil.  Season the chicken with salt and pepper.
  2. Sautee the onions and once it starts to cook down, add the chicken whole.
  3. Slightly brown the chicken on all sides.
  4. Once it is cooked , garlic and chayote than add water to cover.  Bring to a boil.
  5. While that is boiling, take the rice and prepare the rice for cooking.  Take about 3-4 cups of the broth and pour it into the rice and than cook the rice.
  6. Continue to boil until the chayote is tender and the chicken is cooked.
  7. Serve over the cooked Rice

    For dessert, I finally got my Strawberry pie.  Ok I had to make it and I slightly cheated by using an already made pie crust.  There was a sale on strawberries so I couldn’t pass it up.  Too bad I can’t eat too much of it (stupid allergies Open-mouthed smile).
    Strawberry Pie
    Favorite Pie Crust
    2 Pints of Fresh Strawberries
    Strawberry Glaze (Homemade preferred but I bought mine)
    Whipped cream
    Directions
    1. Blind bake the pie crust. 
    2. Once the pie crust is baked and cooled, arrange the strawberries in the pie crust.
    3. Gently pour the glaze to cover all the strawberries.
    4. Serve with whipped cream.

    Update: I almost forgot.  We will be blessed with a little Boy in June.  The daughter is extremely excited and she can't wait to see him.  I'll try to post the ultrasound pics as soon as my lazy self scans the picture.

    1. Oh, Joy! Sorry to hear about your illness. Do take care of yourself esp. you're pregnant. But kudos to you kahit hirap' you managed to come up w/ a dish not one but 2!!! I haven't cooked tinola lately w/c is btw good for this weather. Your strawberry pie looks so delicious!

    4. Congratulations on your pregnancy! Our neighbor just had a baby girl last week and it has been so fun to be around a new baby again. I am sending all of our positive wishes that you are feeling better... I simply can't imagine all you have been thru and doing masters classes on top of it! You are amazing.
      Both of these recipes look wonderful, however I'm drawn to the Strawberry pie! Our local fields are bit behind schedule this year, and I'm eagerly awaiting the berries.

    9. I'm sorry that you've been feeling under the weather. I'm sure tinola would help. Tinola is probably our penicillin when it comes to rejuvenating foods. I liked your version, very different from ours but really interesting. I'll have to try this one day. Take care.

      Hot tinola sounds so good right now. Sayang you can't eat much of the strawberry pie but at least you had what you were craving for.:)
