Not all There at Times

Do you ever want to zone out and not think for just an hour or even a couple of days? That is how I feel lately. It is not that I’m not super stressed; I just can’t seem to have a coherent thought (Shhh Anna). It is probably due to all of the changes lately.

I’m trying to stay motivated to put myself on a schedule and be a little more organized. I keep saying that but I figured with this move, I actually could do so. I failed with my first task today – excising this morning. I woke up a little too late to ride my bike. I did take a break at lunch to walk and I’m trying to motivate myself to go out for another short walk to wake up.

I did have some motivation and edited a bunch of pictures this past weekend. I don’t know why but I never remember when I’m at home. I forced myself Sunday night to edit a couple of folders, so I could actually write a post, instead of making my kids’ lunches (I had to make their lunches Monday morning instead of excising).

When I’m in one of these phases, I find it is the perfect time for a cheater recipe. I tend to make these types more often than I like to admit.

20 Minutes Chili (I know it is wrong)

4 Cloves of Crush Garlic (about 1 Tb)
1 Small Onion (1/2 a Cup)
1 Tsp of Salt and Pepper
1 Lb of Ground Beef
2 Can (12 oz) of crushed Tomatoes
1 Tsp of Cumin
1 Tsp of Paprika
1 Tsp of Cayenne Pepper
*You could add more spices if you like but I’m a wuss and I can’t handle too much heat.

Directions
  1. Sautee the garlic and onion in a medium stock pot coated with olive oil on medium heat
  2. Once the onion becomes translucent and the garlic starts to brown, add the ground beef. Seasoned with salt and pepper.
  3. Cook the meat thoroughly. Once the ground beef is cooked, drain the excess oil from the pan.
  4. Add the crush tomatoes and the rest of the spices (cumin, cayenne pepper, and paprika).
  5. You may want to add a little water if you feel that the tomatoes is not watery enough to create a soup. I like mine on the thicker side.
  6. Reduce the heat to medium-low fire and let it simmer for 10 minutes or until it thickens.
  7. Serve

  2. I totally hear what you are saying! There are many times I want to zone out and rid my mond of all the thoughts and tasks to do. Cheater recipes are perfect for these times and your chili looks super yummy.

  6. I feel like that all the time, but then I'm over 50, so it's a constant state of confusion for me. I think a 20 minute chili sounds perfect!
