Little Man's Birthday

Yesterdays was The Son's first birthday.  Time just flew by.  I still remembering being pregnant and wondering when the little guy was going to arrive.  Now he trying to talk, eating table food, and even walking.

Originally, I was going to pick up a cupcake and candles but yesterday I was a genius and forgot my wallet at home.  So I started to look for a simple and fast cake recipe.  The one problem I had was that my pantry is not as stocked as it once was (I had no baking powder or soda) so I had to be creative.  I inlisted the help of Anna to help me find a quick recipe since I was going to make it after work.  The natives tends get restless when they are hungry.
I went with a cheater boston cream cake.  Cheater since I was using instant pudding as the filling and instead of a chocolate topping (lack of cream and chocolate), I used already made cream cheese frosting.
Cheater Boston Cream Cake
(The cake adapted from All Recipe)
5 Egg
1 Cup of Sugar
1/2 Tsp of Salt
1 Tsp of Vanilla
1 1/4 Cup of All Purpose flour
1 Package of Made Instant Vanilla Pudding - Follow the manufacture directions for preparation
1/2 Can of Cream Cheese Frosting
Directions
1. Preheat the oven to 350F and prepare two inch pans (I used mini long cake,pans-the recipe makes about 10-12 mini cakes) by greasing and flouring it.
2. Whip the eggs until it doubles in size.
3. Add the sugar and salt then mix until it is all dissolved.  
4. Add the vanilla then the flour-2 tbs at a time.  The mixture will become thicker and more dense.
5. Pour the mixture into the prepared pans.
6. Bake for 17-20 minutes.
7. Let it cool.
To Assemble
1.  Slice the cooled cake 1/2.  I made mini ones, so you don't have to slice them if you made two larger cakes.
2. Spread the pudding on the bottom 1/2.  I just used about a tablespoon of the pudding but you could put more if you like.  If you made the regular size cakes, I would use 1/2 the mixture at first then add more if you want.
3. Put the second 1/2 of the cake on top of the pudding then spread the frosting on the top of the cake.
4. Serve

  1. Awww, the widdle baby cake for the widdle baby! It turned out very cute, good job. And for the love of sugar, go out and get baking soda and baking powder! And what kind of a girl are you? No chocolate in the house. I mean, really. Shameful.
