Guess what I just got in the mail

Morels!  Compliments from Marx Foods.  I won a give-away for fresh morels.  I was so excited to try this.

I have never had the opportunity to try them.  I saw a package at my door and I raced to my lap top to search for recipes :D. 
 This is only 1/2 of the box!  There are so many!
I couldn't decide on a recipe.  I wanted a simple recipe to highlight the taste.  So I settle for a stuff morel and a pasta.  How could I have these precious mushrooms and not use them in a pasta!?!  That would be a sin!  One of the recipes I got from the Marx Food website.  The other, I went with what ever I had in the pantry and fridge :D. 
The first recipe I went with was a ricotta stuff morels from the Marx Food website. Luckily, I had a huge tube of from the last weekend and I figured I'll try to use it up.  This recipe is quite simple and i found it very good.

1/2 LB of Fresh Morels
2 Cups of Ricotta Cheese
Black pepper and Salt to taste
2 Eggs
1 Cup of Flour
1 Cup of Bread Crumbs *Italian seasoned ones are best
Olive Oil

  1. First clean the morels in a bowl of cold water than dry them off with a paper towel

  2. Take the eggs and place in a shallow bowl with a little water to be used as a binding agent. 

  3. Take another plate and incorporate the salt, pepper, bread crumbs and flour well. 

  4.  Mix the ricotta cheese and a little of the salt and pepper in a separate bowl. 

  5. Take a pastry bag and fill it with the ricotta mixture and start stuffing the mushrooms.  Do not over stuff or it will break.

  6. Once it is stuff, dip it in the egg mixture than fully coat it with the bread crumbs. 

  7. Fry them in olive oil until they are a golden brown and serve *I also had a side of marinara sauce.
It is like a little jalapeno popper!
Morels pasta
1 box of cooked spaghetti *I used multi-grain pasta
1/2 cup of butter
1cup of ricotta cheese
1 cup of Parmesan cheese
1.5 lbs of morel mushrooms

  1. Take a large skillet and melt the butter.

  2. Once all the butter is melted, add the mushrooms and cook until tender.

  3. Add the ricotta and Parmesan cheese

  4. Mix well and than add the pasta.
