Some people may know this as Cassava pudding. This was the first recipe I ever tried from my mom “secret” recipe book. Sorry guys, I can’t tell you the recipe. This is one of my favorite recipes. It is so simple and I love cassava and coconut. The key for this dish is the topping. It is composed of coconut cream (imagine the coconut goodness) and condense milk. I could eat condense milk out of the can which I try to do in the back of my closet in the dark. If you don’t believe me, you should ask my husband :D. The first time I made it, I used a little crappy hand mixer. I gave up ½ way and just stuck my hands (don’t worry, they were clean) to mix it. I found this is actually the best way to make it. I also over cooked it slightly because I couldn’t tell when it was done. But it was worth all the work and mess I made. After that, I decided to go through my mom’s other recipes to see if I could do it.

Cinnamon Sugar chips
This is probably simplest snack that is eaten all up once I finished making it. My mom told me to eat this during my pregnancy instead of eating chips and candy to keep my blood sugar up. Since than everybody at the hostel (family members than to comes and goes quite a bit) asks me to make some.
Ingredients (the measurements is up to your taste)
Flour tortillas
Sugar
Cinnamon
Water
Directions
1. Mix the sugar and cinnamon together, I generally start with a cup of sugar and pour enough cinnamon to cover the top of the bowl of sugar.
2. Cut each tortilla to the desired size. I generally get 4 – 8 out of one regular size tortilla.
3. Brush water on each piece

5. Bake at 350 for 10-15 minutes
6. Make sure you remove right away to avoid the chips sticking to the pan
* Repeat steps 3 and 4 if you want both sides coated.

Tasting
Unforunately my family is sick of me cooking. Could you believe that? Sick of homemade food so I decided to invited a bunch of friends and family to get their opinions on som of the recipes I have been testing. There are the results of all the cook I did for a week. By request from some people that wasn't able to attend I hold another one. I think they want to get fed but I don't blame them. I would do the exact same thing. I'll post the pictures next month.

The different stuff I bake
In the Last two years I have been slowly going through my mom's book of recipes. Throughout this blog, I will mainly be baking. Lately this has been my main focus. Generally I love eating and I started catering too all my mom's friends. I wanted to post some of the pictures. Don't worry I'll write more about each thing and maybe give a recipe or two ;D
Fran's Wedding
As a wedding gift for one of my friends, I made all her flower arrangements for the weddings. This was exciting for me since this would be the first time I did it all by myself. I'm a big girl now :D. I spent years watching my mom doing this for various weddings and anniversaries for my family. My mom even made all the arrangements for my wedding. I figured I would help her save some money by making her flowers. Please keep in mind, this is the first time.

Hi Everybody,
I would like to introduce myself, my name is Joy Alegria and some people may recognize the meaning of my name to happy happy. All my life I have always be involved in something creative from music to art. I need the outlet to escape the daily task of working :D. My current hobbies are photography, playing the piano (I'm not that great anymore), baking, and arranging flowers. I try to experiment as much as possible with my baking and I just started arranging flowers.
