Kulinarya - Ice Candy




Ice Candy?!?!  That just looks like a regular Popsicle.  I know you are thinking that. Thanks to our hosts this  month for the Kulinarya cooking club :Arnold of Inuyaki and Jun of Junblog, the theme is ice candy.  You are probably wondering what is ice candy.  It is the Filipino version of a freeze pop if you grew up eating those.  I actually still have some in my freezer.  It is a Popsicle in a plastic tube for easy transport.  Unfortunately, I was not able to find the packaging so I decided to make Popsicles.  The base of this summer treat is fruit juice, sugar, fruit, and sometimes milk.   I search my stash of ingredients and load and behold I found some strawberry puree, crushed pineapple, and macapuno (young coconut).  So I went to work.

Strawberry, coconut and pineapple ice candy
1 Package or 8 Ozs of Strawberry puree
1 Cup of Milk
1 Can of Crushed Pineapple
1 Jar of Macapuno 
1 Cup of Sugar (you could omit if you would like to have it less sweeter)

Directions
  1. Put all of the ingredients into a blender except for the sugar.
  2. Slowly add the sugar until it reaches the sweetness that is desired.
  3. Pour into Popsicle molds, freeze over night.
  4. Serve
How easy is that.  This way you could determine what goes into it.  You may want to add cream if you seek a creamer "ice candy".

    We make popsicles all the time, and these look terrific. I've never seen Macapuno in an asian store though. Is there another name for it? Where do you suggest finding it? Or an alternative? Coconut milk?
