Ensaymada donuts.....Whaaaa?!?!

Like the title? I giggled a little when I wrote it. I had the voice of Homer Simpson playing in my head as I was writing it (hmmmm donuts). I set out to make donuts. This started when I was doing a little “research” which really meant me sitting on my couch watching either the cooking channel or food network, mainly the cooking channel. On an episode of those food find shows like unique eats, the topic donuts was highlighted. One of the participating restaurants made a donut out of brioche dough. Some of you may know how much I love brioche especially if I am able to use the dough in different applications. My ultimate favorite is ensaymada. Butter, sugar, and cheese what more could you ask for? When I saw the show, I knew I had to try to make donuts with the ensaymada topping. At first I tried making donuts holes and shake the cheese and sugar as a donut coating but that didn’t work as well. The second time I tried I made actually donuts instead of donut holes and fried them accordingly. The funny part, I only had a 3 inch round cookie cutter and to make the hole in the middle I used a mini duckie cookie cutter (it was the roundest cookie cutter I had). So I had mini duckie donut holes which was cute but funny. I got a chance to make them for a few of my friends for a craft party. They brought the projects they have been meaning to finish to my house to finish them up We got “a few” things done but we may need another one to actually finish stuff. The Munchkins had a ball since they got to with play with stickers and I feed them with donuts.
Ensaymada Donuts
A batch of prepared Brioche Dough (I used this one )
Coby Jack Cheese
Butter
Sugar
Oil
Directions
  1. 1. Heat up the oil in a large pot or pan until it reaches 375F (make sure you have a thermometer since someone, we won’t name names pointed out that my oil was too hot and I should measure the temp and I of course didn’t).
  2. 2. Roll out the brioche dough until it is about 1 inch thick.
  3. 3. Cut out the donuts with a donut cutter or if you want to be MacGyver and use a cookie cutter with a smaller cookie cutter - go for it
  4. 4. Place in the oil and it should immediately frying.
  5. 5. When it starts to float and turns a golden brown, flip them to cook the other side.
  6. 6. Remove form the oil and let the oil drain onto a paper towel.
  7. 7. Brush the top with butter ( as if there isn’t enough butter in brioche) and top with cheese and sugar.
  8. 8. Serve.

This was the first attempt. Not bad but not the goal.

  3. ha ha Joy! You got all your favorites in one donut! Awesome! I know, I, too, always think of Hoemer whenever I see a donut. I love donut recipes - so I'm saving this one, too. :)
