No Carb Fajita aka Lettuce Wrap

IMG_5258

I am proud to say, I actually shed 5 lbs total.  For me in a week, that is not too  bad at all.   I have no idea how I did it because I got stuck taking the kids from one place to another.  I do wish I had more time to exercise but I did find that if I pushed The Son around in the stroller for at least an hour it burned a good 200+ calories.  Lets just say, I went shopping a lot.  I also spent a lot of money this week too.  What could I say I was tempted.  The Husband has been surprised I haven’t cheated yet.  He even walks around the house with cookies…Tease.  It also doesn’t help that I read food blogs.  It is never ending torment but I can’t help myself.  I love food even if I can’t eat any of it.
This is the other recipe from my post from the other day.  I found some skirt steak and all I wanted was fajitas.  But since I was can’t eat any carbs, I improved and decided to use romaine lettuce.  It wasn’t too bad.  I just wish I was able to eat some salsa and sour cream.  The sacrifices just to be healthy.
No Carb Shirt Steak Fajitas
2 Lbs of Skirt Steak Slice Thin
1 Large Onion Sliced
3 Cloves of Garlic
3 Large Green Peppers
Steak Seasoning to Taste
Roman Lettuce
Directions
  1. Sauté the garlic and onions.
  2. Once the onion softens, add the green peppers.
  3. Cook until tender.
  4. Add the sliced skirt steak and season.
  5. Cook until the desired meat temperature - I made ours to a medium well.
  6. Serve with the lettuce to make a taco.
How do you get any physical activity with kids?
