Cotton Soft Japanese Cheesecake and Another Wonderful Cause

I saw this recipe when  I first started to experiment in cooking.  I keep telling myself I’ll try it, I’ll try it but It got buried at the back of my “to-try” recipe list.  I took the opportunity of the Foodbuzz tea party to make this wonderful cake.  The funny part I don’t really like cheesecake.  I find it a little too rich for me.  Though I do like Danish's but I can’t seem to eat a regular cheesecake.  This recipe was very tempting because it was light and fluff (It is so fluffy I could die….sorry about the Despicable Me reference). There are multiple versions of this recipe but I settled on one from Dashi Dashi
Cotton Soft Japanese Cheesecake
(Adapted from Dashi Dashi)
250 G or a little more than one brick of Cream Cheese
50 G or a little than 1/2 a Stick of Butter (Unsalted please)
100 ML of Milk
6 Eggs Separated
60 G of Cake Flour
20 G of Cornstarch
140 G of Sugar
1 TBSP of Lemon Juice
1/4 Tsp of Cream of Tarter
1/4 Tsp of Salt
Directions
  1. Pre-heat the oven to 350F with a large pan 1/3 filled with water.  This cake is cooked bain-marie style.
  2. In a double boiler, “melt” the cream cheese, butter, and milk.  Mix until it is smooth. 
  3. Once the texture is smooth enough, remove from the heat and set aside.
  4. Take the egg whites and place it into a mixing bowl and add the sugar and cream of tarter.  Let it sit for 5-10 minutes.
  5. While that sits, put the egg yolks into a different mixing bowl and than add the salt and lemon juice. 
  6. Sift into the egg yolk mixture the flour and corn starch.  Mix until it is well incorporated.
  7. Start to whip the egg whites until it forms soft peaks.
  8. Once the egg whites is ready, slowly fold in the egg whites into the egg yolk mixture. 
  9. Pour into a prepared pan.  I used a 9x13 pan but if you would like a thicker cake, I would use a 9 inch pan.
  10. Bake in the bain-marie for an hour and 10 minutes. 
  11. Let it cool and place in the refrigerator to cool overnight. 
  12. Serve Chilled.
It was really good with the calamansi curd I made.

I would like to get a little serious now.  For some of you that has read my blog for a while, you would know that I participate in the Y-Me Breast Cancer Walk every year.  Unfortunate I am not able to participate this year.  I will be a little large and waddling the whole time.  It would probably take me about 5 hours to finish a 5k.  The reason I walk each year is for my aunt Glady.  I wish I am able to walk this year but I figured next best thing is to help raise money.  This is where I ask for your help.  The first year I walked, it was so moving to see the amount of people affected by this horrible disease.  As you walk, you would see the massive amount of people walking in grant park with different signs and t-shirts with their loved ones.  It moves me to tears each time   Any donations would be wonder.  If you are not able to donate, bringing awareness of this walk and disease would be great.  Please donate here or click on the image.

  9. We just watched Despicable Me a few days ago! That's such a cute movie. I love how this recipe doesn't make the traditional dense cheesecake. Definitely going to try this one out.

  11. What a great post, Y-Me was a life saver for me when I was diagnosed with breast cancer 21 years ago while in my 30's. Great group and a tasty snack..yum!
