Do you ever wake up and you are just off? Not off like you forgot something but instead of being in the real world you are in La La land and you can’t seem to snap out of it. I am sitting here “attempting” to work and all I could do is stare. I knew I needed to start the day over when my coffee mug broke and coffee spilled all over the garage floor. This happened while I carried The Son (or his new nickname The Fat One), my lunch bag, keys, and yelling at The Daughter to hurry up. This is me most mornings. Even how prepared I could be I still run all over the house looking for stuff and getting stuff ready. What made it worse is The Daughter is opinionated about her outfits and she needed bring a purse to school. She is 2 and the girl needs a purse. The daughter is becoming a little diva right before my eyes. Please save me from the teenage years.
So I sit here pretending to work, I am looking forward to getting home and go into my kitchen to get a well deserved treat like some carrot cake (shhhhh I’m suppose to be on a diet). It may be early but it is becoming one of those days that you need a treat. For some reason I have been craving carrot cake. I think it is the cream cheese icing that I crave the most but I’m sure it would be frowned upon if I just ate the icing right out of the jar. At least The Husband wouldn’t like it as if he should talk since he eats ice cream straight from the freezer. And I don’t mean really cold but he sticks his head in the freezer to pretend he is looking for something. And he wonders why I have been cheating. Any way off of topic, I wanted to try to make whoopie pie. I wanted to see what the big deal was. I have been more on the lazy side so I used cake mix instead of making my own and I used store bought cream cheese. When you are treating yourself, something you need to go the easy route.
Carrot Cake Whoopie Pie
(I actually Googled how to make cookies from a cake mix. I reference yahoo answers)
1 Box of Carrot Cake Mix
1/2 Cup of Oil
1- 2 Eggs (I added one egg at a time to determine how runny the batter became. I used only 1)
Cream Cheese Frosting
Directions
- Mix all the ingredients together to form a cookie dough.
- Place in the refrigerator for about 1/2 an hour to chill.
- Preheat the oven to 350F
- Once the dough chilled, scoop out the dough ( about 1 inch thick cookies)
- Bake for about 8-10 minutes.
- Let it cool.
- Frost one of the cookies flat size and than sandwich the cookies together.
- Serve
That's too funny! And what exactly is wrong with eating ice cream in the freezer? The whoopies look cute, good job...and you finally got your cake fix!
ReplyDeleteMy husband does the exact same thing with ice cream. And then I pick up the carton so I can make something and there's just a teaspoon left in a corner!

ReplyDeleteI know what you mean by off. Some mornings I wake up and seem to be a different person. I do sympathize with your situation. I was in the same one a decade or so ago and now I do miss it. Babies grow so fast so do enjoy them. Nice whoopie pes by the way. Enjoy them, too.
