For the Fresh Lumpia, I used the same recipe as I did in a previous post. I thought this dish would best display vegetables.
The other dish I have been dying to try is vegetarian palabok. One of the many times The Mother came to visit, she brought one of my aunts with her. She showed me a palabok recipe that The Daughter is able to have. It is seafood free but you are able to add some shrimp or tinapa if you like. Vegetarian Palabok
1 Package of palabok noodles (The Mother says spaghetti works too)
2 Cans of Cream of Mushrooms + two cans of water (I just cleaned out
2-3 Tbs of Ground Annatto Seed
4 Tbs of Chicken Bouillon
1 Onion Chopped
4 Cloves of Minced Garlic
1 Package of 8 oz. or more Soft Tofu
Directions
- Soak the noodles in water to soften.
- Sautee the onions and garlic in a large wok or pan.
- Once the onions and garlic soften, add the tofu, bouillon, annatto seed and mix well.
- Add the cream of mushrooms and water than bring to a boil.
- Once the sauce is done, add the noodles and let it simmer until the noodles is soft and cooked.
- Serve with the topping of your choice.
My oh my...you're the second member that used tofu! Now i'm craving for some tokwa. Your palabok version sounds so good! And your lumpia looks so fresh! Great job on this challenge.

ReplyDeleteI used to make my palabok semi-vegetarian with puffed tofu. It's not as satisfying as regular palabok but very good too.:)

ReplyDeleteI've added tofu to palabok a few times & it's a great alternative when going for a meatless version. Great to put on lumpiang sariwa as well.

ReplyDeleteJust made this today; all I can say is: THANK YOU! My 10 yr old girl child gave it a great big "I like it!" and asked to have it for dinner, vice the ravioli I already had warming in the oven. Then she asked for SECONDS! Although it isn't as flavorful as the carnivorous version, it is very, very good by vegetarian standards - surprisingly so! Tweaked it a bit as all I had on hand was the extra firm tofu, added a small squirt of patis (couldn't resist), then crushed up a whole bag of shrimp flavored crackers, since I couldn't find vegetarian chicharon. Topped it with sliced green onions, boiled egg, and fried garlic. Yummy and thank you again for sharing!
ReplyDeleteChicken broth is not vegetarian, so may I suggest either not calling this vegetarian or changing it to vegetable or mushroom broth. Thanks...might save a vegetarian's belly if a meateater trying to be kind, brings this "vegetarian" dish to a gathering. Thanks!
ReplyDeleteThis is not vegetarian if you're using chicken bouillon (contains chicken meat and chicken fat).
ReplyDeletePardon me but there's nothing vegetarian in putting chicken broth in a recipe. I would suggest putting in vegetable broth instad... :)
