Meyer Lemons

I was walking around Caputos right by my house and I saw that Meyer Lemons was on sale.  Five for a dollar so I bought 10 of them.  I had so many ideas what to use these for but instead I decided to juice them and than use the peels for extract.  I first juiced the lemons and than poured them into ice trays.
Once the juice was frozen, I removed them from the tray and stored in a zip locked bag.

I found the recipe for the extra from Tipnut

1 lemon
1/2 cup vodka
1/2 cup water

■Peel lemon removing all of the white pith from the peel
■Dice the lemon peel finely
■Combine vodka, water and peel into a large glass jar, seal
■Store for 5 days before using

  1. Never made any lemon extract sounds fun and easy to work with.

  2. Oh I didn't realize it until my friend Anna from blondiecakes told me. So now I have 7 jars.

  3. This recipe looks really cool.
I will certainly try it at home sometime especially I love things with a bit lemon flavour!
Thank you for sharing this recipe.

  4. I love Meyer Lemons, so making extract to have when they are not is season is a great idea!

  5. Hi Joy! I love how you juiced the lemons and saved them in ice cube trays - such a simple yet practical idea - why didn't I think of that before!

  6. What a great idea to make Lemon Extract. I've heard of people making their own vanilla extract but never lemon. What a genius idea...

  7. This looks great and I'm going to try it! You said you were walking around Caputo' you live in SLC? There is a Caputo's in downtown SLC that I just dad grew up with one of the Caputo boys so he likes to pop in there once in a while too! I wish I could go more often but I live in Seattle!

  8. Actualy I live right out of Chicago. Growing up, we always went there for our produce and deli. My dad lives in California now and he has to stop by there everytime he is in town just for the deli.

  9. A great post about lemons. I have heard of meyer lemons before but never tried them.
