Kulinarya Cooking Club - Polvoron

I was so excited for this month's theme.  The Husband was able to find a polvoron form.  I decided to make one from my handy The Filipino Cookbook by Reynaldo Alejandro.  polvoron has been a favorite of mine since I was a child.  I always loved eating it and my favorite was my grandmother's recipe.  Unfortunately, I don't have the recipe and I miss it so much.  This recipe got close and I even added some pinipig.
Ingredients
3 Cups Sifted Flour
1 Cup Sifted Powdered Milk
3/4 Cup Sifted Sugar
1/2 Pound of Melted Butter
1 Teaspoon of Lemon or Vanilla Extract
1 Cup of Pinipig
Directions

  1. Toast the flour in a heavy skillet over a medium heat until golden brown while stiring constantly.

  2. Remove from heat and cool.

  3. While it cooks, toast the pinipig in the skillet.

  4. Add the powdered milk, sugar, melted butter, pinipig, and the extract.

  5. Pack the mixture into the form and press out the little cakes.

  6. Wrap the polvoron in wax paper.

  2. I haven't made mine yet - cannot find a form... what should I use? I found a recipe that uses peanuts - not the rice - I have no idea where to find that... but, shall try. So - it "got close" - it was good - but not as good as you remember?
Thanks for sharing. I am still stumped. I have no frame of reference for this kind of treat - so can't wait to try to make them!

  3. You could use a cookie cutter for the form. Like a small one.

  6. Yummy, I have that cookbook too and I've gotten a lot of good recipes from there. Your polvoron must have tasted great with the lemon or vanilla extract :)
