Where did the week go?

I could swear it was just Monday.  Don’t get me wrong I love Fridays but I thought I had so much time to get things done.  It is Friday and guess what I got done - nothing.  Oh well, maybe next week.  There was one main reason – I have been putting all of my efforts and time to losing weight.   I came to realized the older I get, the harder for me to lose the weight.  Ohh aging.  I have always been in a constant war with my love of food and my weight.  I made a promise to myself that I will lose weight.  So I came to realization that if I didn’t get help to drop the added baby and husband weight, I won’t be able to drop the weight.



There was a Groupon to have a month’s worth of weight loss help at a clinic in the area for half off! I heart Groupon.   They were so helpful and answered all of my questions.  The first leg of this “diet” was to just eat meat and green veggies for three days.  My day would start with an orange and tea (no cream or sugar for coffee) than the rest of day was filled with eggs, veggies like spinach, meat, meat, and more meat.  I just completed the first leg of the program and I was able to lose 4 lbs.  4 lbs!  I’m so motivate to keep going.  I do crave chocolate and cake btw. 
Here is a few things I made over my meat and veggie binge

Zucchini Pasta top with Lemon Shrimp (Recipe see below)

Egg White Frittata
I needed to put variation to my meals or I might have broken down and cheated.  Here is my recipe for my shrimp “pasta” recipe.
Zucchini “Pasta” Top With Lemon Shrimp
Serves 1 (I was directed to measure everything out)
1 Zucchini
5 Already Cooked Shrimp Thawed
1 Clove of Garlic Diced
Lemon Pepper Seasoning
Directions
  1. Take the zucchini and use a peeler to make thin ribbons out of the veggie.
  2. Heat up a medium skillet and start cooking the garlic.
  3. Once the garlic started to cook, add the zucchini pasta.
  4. Season with the lemon pepper seasoning.  Make sure the “pasta” is mixed to prevent burning. 
  5. Once it is cooked and tender, remove from the pan and set aside.
  6. Place the thawed shrimp into the same pan and season with the lemon pepper seasoning.
  7. Cook for only a couple of minutes or until it is hot and top the “pasta”.
  8. Serve

Now I get to eat other foods within reason.  Hopefully I could keep this momentum going.  I still want a cupcake though.

  1. Oh dear. I have - make that HAD - 26 cupcakes in my kitchen yesterday. Today there are only ...well... quite a few less. Will be looking out for a similar groupon deal here because the food looks wonderful - AND you get to shed pounds. Wuhoo!

  2. I feel your pain! Just joined a popular on-line program and after following it to a tee all week I get to eat a piece of cake tonight - yay! The zucchini pasta is a great idea! Looks delicious too.

  5. I know all about the food/weight war... I too am getting older (and bigger). It's so frustrating! I wish you the best in this endeavor - you go girl!

  6. The cake cravings will subside. You just have to ride through them for now. When I gave up all processed sugars and carbs for 40 days, the first few days were the worst, then I found a groove of snacks and ingredients that I enjoyed and the process was easier every day. Keep it up :)
