Calamansi Danishes

I don’t know if you really qualify this as a Danish but that is the best way for me to describe the recipe.  This is the last recipe I promised to post from my little Tea party.  I really wanted to practice my croissant recipe again to get the procedure just right.  I thought my original procedure was pretty close but I realized I needed the help of The Husband to roll out the dough.  I don’t have enough arm strength to get the dough thin enough.  The filling was a basic cream cheese filling topped with a calamansi curd. 
Croissant dough
*Roll it out as thin as possible, like 1/8 of an inch.
Cream cheese Filling
1 Package of Cream cheese
1 Egg
1/4 Cup of Sugar
1 Tsp of Vanilla
Just mix all the ingredients until it is smooth.
Calamansi Curd
1/2 Cup of Butter Diced
1 Cup of Sugar
1/2 Cup of Calamansi Juice
5 Eggs (Slightly beaten)
Directions
  1. Over a double Broiler, mix together the sugar, juice, and butter.  Heat until the butter melted.
  2. Wisk in the eggs and continue to mix until it thickens
  3. Once it cooked, strain the mixture to remove any chunks.
  4. Let it cool.

Assemble
  1. Pre-heat the oven to 350F
  2. Roll out 3 inch squares of the croissant dough and place into a muffin tin.
  3. Put a dollop of cream cheese filling than top with the curd.
  4. Brush the sides with an egg wash.
  5. Bake for 30 minutes.
  6. Cool and Serve

  1. Sigh... calamansi... It makes me miss the philippines! When I was walking along the beach in boracay, I saw a sign for a bar that said "home of the calamansi muffin". Of course I had to try one.   9. The word calamansi evokes such warm memories. Aren't they just so lovely? These little things give out so much scent when squeezed. Your danishes look wonderful!!!. I like the crusty borders and I can just imagine how much I would love that puddle of calamansi curd in the center.

  11. Joy I had to go look up calamansi juice after reading your post. I read about all the things one can use that sour orange flavor for and now I wish I could try your danish.

  25. I'm rather intimidated by the idea of making croissant dough, but I am loving your calamansi curd recip! At the very least, I will have to make a batch of that, if only to use it as a delicious spread. 8-)
